Freezing and reheating cannelloni, done right

Cannelloni is one of the best freezer dishes in existence — the sauce protects the pasta, and the flavors hold for months. But the results differ sharply depending on whether you freeze before or after baking, and on the dish you freeze it in.

Freeze unbaked (the better way)

Assemble completely — sauce, filled tubes, more sauce, cheese — then wrap and freeze before baking. The pasta hydrates during the eventual bake, so it tastes freshly made rather than reheated.

  • Wrap: plastic wrap pressed onto the surface, then foil over the dish.
  • Keeps: up to 3 months at peak quality.
  • Bake from frozen: remove plastic, re-cover with foil, bake at 180°C / 350°F for 60–70 minutes covered, then 10–15 uncovered, until bubbling at the center (74°C / 165°F internal).
  • Thawed overnight first: bake as the original recipe directs, adding about 10 minutes.

Freezing leftovers (already baked)

Portion into airtight containers once fully cool. Keeps 2 months. Reheat covered at 160°C / 325°F for 25–30 minutes, or microwave individual portions at medium power with a spoonful of water under the foil-free cover — full power turns the pasta rubbery at the edges.
